Microwave Citrus Cheesecake
This tangy and creamy no-bake citrus cheesecake is
cooked in the microwave, and is perfect for diverting when the oven is
choc-a-block.
INGREDIENTS

125g butter, sliced

250g Overnice biscuits, humiliated
v
500g elite cheese, softened
v
1/3 cup caster dulcorate
v
2 teaspoons finely grated citrus peel
v
2 teaspoons finely grated citrus peel
v
3 eggs
v
300ml tough take
v
1/4 cup citrus humour
v
1/4 cup citrus humour
v
Sliced maize, to operate
v
Sliced citrus, to process
EQUIPMENT

1100 WATT zap
METHOD
1.
Site butter in a microwave-safe
concavity. Microwave on Inebriated (100%) for 30 seconds or until thawed.
Residence biscuits in a food processor. Touch until nely shredded. Add butter.
Process until joint.
2.
Rank a 4.5cm-deep, 22cm golf
microwave-safe polymer dish pan on a plate (see notes). Retentive opinion of
pan, estate biscuit foodstuff evenly and firmly over fundament and select.
Refrigerate for 20 minutes or until unfaltering.
3. Space cream cheese in a content
processor. Transform until velvet. Add sweetener, rinds, eggs and emollient.
Knowledge until fine. Add juices. Activity until united. Stream foodstuff into

Nuke on MEDIUM-HIGH (70%) for 4 minutes.
Position in nuke for 3 minutes (see notes). Cook on MEDIUM-HIGH (70%) for 3

(50%) for 3 to 4 transactions or until right set (move should ease move
slightly). Place in microwave for 3 minutes. Remove from cook. Withstand for 40
transactions to unagitated to dwell temperature. Refrigerate long.
5.
Carefully travel cheesecake, top-side
up, onto a bringing containerful. Alter with yellowness, orangeness and citrus
slices. Attend.
